Jacqueline Alwill’s Tomato & Zucchini Noodle Soup

1 x Eimele Mushroom & Creamy Corn Soup Sachet
3-4 (35g) broccoli florets
1/4 small (20g) zucchini
4 (25g) cherry tomatoes, halved
Sprig fresh basil leaves, finely chopped


  1. Place broccoli florets in a bowl, pour boiling water over the top and blanch for 3-4 minutes, drain and set aside.
  2. Spiral zucchini into noodles using a spiraliser or vegetable peeler.
  3. Place Eimele Creamy Mushroom & Corn Soup in bowl with 300ml hot water and whisk well.
  4. Add broccoli florets, zucchini noodles, cherry tomatoes and serve with fresh basil leaves sprinkled over the top.
