Simon Hill’s Tofu Scramble w/ Mushroom & Hummus

100g/7oz Organic Firm Tofu
½ tsp/1g turmeric powder
½ tsp/1g onion powder
½ tsp/1g garlic powder
2 slices of Wholegrain Bread (See Notes)
2 tbsp hummus
1 large roma tomato
3/4 cup mushrooms
  1. First, make the scrambled tofu. Heat a pan over medium heat. Crumb the tofu with your hands and cook it in the pan with turmeric powder, onion powder and garlic powder. Add a splash of water to ensure the spices get distributed evenly. Cook until lightly browned. Set aside.
  2. Add the mushrooms to the pan and toss until soft.
  3. Next, toast the bread, and chop the tomatoes.
  4. Finally, spread the hummus on the bread, place the tofu scramble on top and sprinkle with hemp seeds. Eat the tomatoes and mushrooms as a side.
Calories vary widely in bread, so ensure that 2 slices of whichever bread you purchase equal around 170-180 calories.
