1 x Eimele Creamy Pumpkin & Sweet Potato Soup Sachet
100g hard, organic tofu, cut into squares
1/2 tsp coconut oil
1 tsp red Thai curry paste
Small handful fresh coriander leaves
1 lemon wedge
Optional: Extra chilli flakes
- Heat a small fry pan on medium to high heat, add coconut oil to coat the pan, then add tofu pieces and sear on each side to heat approximately 3-4 minutes. Remove from heat and set aside.
- Place Eimele Creamy Pumpkin & Sweet Potato Soup in bowl with 300ml hot water and red Thai curry paste and whisk well.
- Top with tofu pieces, fresh coriander and squeeze with lemon juice, add extra chilli flakes if desired and serve.
