1/3 cup (100g) cooked quinoa
100g poached or grilled chicken (can use tofu as vegetarian substitute)
1/4 small (50g) avocado
1 Asian shallot, finely sliced
50g mung bean sprouts
1/2 small (50g) cucumber, finely sliced
Small handful parsley leaves
1 tsp balsamic vinegar
Sea salt and black pepper
- Make the base for your bowl using quinoa, then arrange chicken, avocado, shallots, mung bean sprouts, cucumber and parsley over the top.
- Drizzle with balsamic vinegar, season with sea salt and black pepper and serve.
