Simon Hill’s Smashed Avo & Chickpea Toast

(Serves 1)

½ avocado
2 slices of wholemeal bread
½ can chickpeas
1 tsp turmeric
1 tsp paprika
½ cup/0.4oz/11g Kale
Garnish with your favourite toppings (I like adding some chopped cilantro, basil or squeezing some lime).


  1. Toast your bread.
  2. In the meantime, drain the chickpeas and add to a pan with 1 tbsp water and the turmeric and paprika. Cook until spices coat all the chickpeas and they have slightly browned. Set aside.
  3. Add the kale and garlic to the pan and toss until slightly softened.
  4. Next, slice the avocado and use a fork to mash it until soft.
  5. Once bread is toasted, spread your avocado on the bread and top with chickpeas.
  6. Eat the kale as a side or an extra topping. Garnish with cracked pepper and enjoy!
Wholemeal Bread – Make sure the main ingredient is wholemeal flour, just because a bread looks brown doesn’t mean it is healthy! Also keep in mind the calories may vary depending on which bread you choose.
