Simon Hill’s Warming Apple Cinnamon Oats

Ingredients:
3/4 cup/2.6 oz/75g Rolled Oats
1 ¼ cup/10 fl oz water
1 tsp/0.2 fl oz/5ml pure maple syrup drizzled on top
1 Medium Apple
1 tsp/0.5 g cinnamon
2 tbsp/0.5 oz ground or whole flaxseeds (also called Linseeds)
Instructions:
- Add oats and water to a saucepan on high heat, add chopped apple (or leave out if you prefer it raw and crispy) cover and cook until bubbling
- Stir in the cinnamon and wait until the water is almost completely absorbed but the oats still look creamy.
- If you overcook them and they look dry, add a tbsp of water or plant-milk to make it creamier.
- Transfer to a bowl, and garnish with extra cinnamon, maple syrup and fruit if you have kept it raw.
Notes:
If you prefer a cold breakfast, this recipe can easily be made overnight – just add all the oats and cinnamon to a jar, top with apple and add enough water or almond milk to cover the ingredients .
