Simon Hill’s Veggie Tofu Stir Fry with Brown Rice

(Serves 1)

Ingredients:
2 cups of veggies of choice (Bok choy, beans, carrots, capsicum/red bell pepper, broccoli)
1 onion
1 garlic clove
100g/3.5oz of extra firm tofu
1 tbsp/0.6 oz/15ml tamari
1 tsp/0.2 oz/5 ml sesame oil
1 cup/7.5oz/250ml cooked brown rice
Instructions:
  1. First, make the brown rice according to packet instructions.
  2. In the meantime, heat a few tbsp of water in a pan on medium heat and add the diced onion and garlic. When tender and the water has been absorbed, add the diced tofu and sesame oil and cook until lightly browned.
  3. Next, add the veggies. If frozen, defrost in microwave before adding to the pan. Add the tamari to the pan and cook until veggies are tender.
  4. Combine well and serve on top of the brown rice.
