Jacqueline Alwill’s Vegetarian Sung Choi Bao

(Serves 1)

1 tsp coconut oil
1 clove garlic, peeled and finely chopped
1 tsp grated ginger
100g button mushrooms, finely chopped
1/2 cup cooked quinoa
1/4 cup cooked tinned lentils (rinsed and drained)
1 1/2 tbsp tamari
1 tsp sesame oil
3 Asian shallots
1/4 bunch coriander, leaves pick, stalks finely chopped
8 lettuce cos or butter lettuce leaves



  1. In a fry pan combine on medium heat coconut oil, garlic, grated ginger and cook for 3 minutes.
  2. Add mushrooms, cooked quinoa, cooked mung beans or lentils, 2 tablespoons water, tamari or soy sauce, sesame oil and cook 5 minutes.
  3. Add finely chopped Asian shallots (white and green part) and coriander.
  4. Spoon into lettuce leaves and enjoy!
