Serves 6

Dairy Free  : Vegan 

 

Filling:

2 medium mangoes, approx 1 1/2 cups (250g) flesh cut into cubes 

2 cups (330g) frozen mixed berries 

1 red apple (125g), cut into small dice or grated 

1/4 cup water 

1 teaspoon ground cinnamon 

 

Crumble:

2 sachets EIMELE KAKADU PLUM AND PINEAPPLE PORRIDGE or 1 cup rolled oats 

1 cup (78g) shredded coconut 

4 tablespoons (80ml) extra virgin olive oil 

2 tablespoons (40ml) maple syrup 

2 tablespoons (40ml) water 

 

Heat oven to 180C. Combine all the filling ingredients in pie dish or deep oven proof baking dish, and toss. In a separate bowl mix together ingredients for crumble, then spread over the top of the filling evenly. You may need to use your hands to do so. Cover with foil and place in oven to cook for 20 minutes, remove foil and cook a further 20 minutes. Serve as is or with a dollop of natural or coconut yoghurt.
