Simon Hill’s Tofu Scramble w/ Mushroom & Hummus
(Serves 1)

Ingredients:
100g/7oz Organic Firm Tofu
½ tsp/1g turmeric powder
½ tsp/1g onion powder
½ tsp/1g garlic powder
2 slices of Wholegrain Bread (See Notes)
2 tbsp hummus
1 large roma tomato
3/4 cup mushrooms
Instructions:
- First, make the scrambled tofu. Heat a pan over medium heat. Crumb the tofu with your hands and cook it in the pan with turmeric powder, onion powder and garlic powder. Add a splash of water to ensure the spices get distributed evenly. Cook until lightly browned. Set aside.
- Add the mushrooms to the pan and toss until soft.
- Next, toast the bread, and chop the tomatoes.
- Finally, spread the hummus on the bread, place the tofu scramble on top and sprinkle with hemp seeds. Eat the tomatoes and mushrooms as a side.
Notes:
Calories vary widely in bread, so ensure that 2 slices of whichever bread you purchase equal around 170-180 calories.
