Jacqueline Alwill’s Thai Spiced Tofu

Ingredients:
1 x Eimele Creamy Pumpkin & Sweet Potato Soup Sachet
100g hard, organic tofu, cut into squares
1/2 tsp coconut oil
1 tsp red Thai curry paste
Small handful fresh coriander leaves
1 lemon wedge
Optional: Extra chilli flakes

Instructions:

  1. Heat a small fry pan on medium to high heat, add coconut oil to coat the pan, then add tofu pieces and sear on each side to heat approximately 3-4 minutes. Remove from heat and set aside.
  2. Place Eimele Creamy Pumpkin & Sweet Potato Soup in bowl with 300ml hot water and red Thai curry paste and whisk well.
  3. Top with tofu pieces, fresh coriander and squeeze with lemon juice, add extra chilli flakes if desired and serve.
