Simon Hill’s Peanut Butter Banana Oats

¾ cup/2.6 oz/75g of Rolled Oats
1 ¼ cup/10 fl oz water
½ tsp/0.1 oz cinnamon
1 tbsp/0.6 oz peanut butter
1 tbsp/0.2 oz ground flaxseeds (also called Linseeds)
1 tsp/0.2 oz/5ml pure maple syrup drizzled on top
- Add oats and water to a saucepan on high heat, cover and cook until bubbling.
- Stir in the cinnamon and wait until the water is almost completely absorbed but still creamy.
- If you overcook them and they look dry, add a tbsp of water or plant-milk to make it creamier.
- Transfer to a bowl, and top with banana, maple syrup, peanut butter and flaxseeds.
If you prefer a cold breakfast, this recipe can easily be made overnight – just add all the oats and cinnamon to a jar, top with peanut butter and add enough water or almond milk to cover the ingredients. Add the banana once you’re ready to eat it.
