Jacqueline Alwill’s Grilled Mushrooms w/ Chilli & Thyme

(Serves 1)

2 field mushrooms or 1 large mushroom
Pinch chilli flakes
1 tablespoon olive oil
1 teaspoon thyme leaves
Sea salt and black pepper
2 slice wholegrain or gluten free bread
To Serve:
Kimchi, sauerkraut or fermented vegetables


  1. Preheat grill to medium high and line a baking tray with greaseproof paper.
  2. Scrub mushrooms to remove any dirt, then place stalk side up and drizzle with olive oil and sprinkle with thyme leaves and chilli.
  3. Place under grill to cook 8 minutes.
  4. Remove from oven and serve with wholegrain toast  and fermented vegetables.
