Jacqueline Alwill’s Grilled Mushrooms w/ Chilli & Thyme

2 field mushrooms or 1 large mushroom
Pinch chilli flakes
1 tablespoon olive oil
1 teaspoon thyme leaves
Sea salt and black pepper
2 slice wholegrain or gluten free bread
Kimchi, sauerkraut or fermented vegetables
- Preheat grill to medium high and line a baking tray with greaseproof paper.
- Scrub mushrooms to remove any dirt, then place stalk side up and drizzle with olive oil and sprinkle with thyme leaves and chilli.
- Place under grill to cook 8 minutes.
- Remove from oven and serve with wholegrain toast and fermented vegetables.
