Simon Hill’s Fresh Tempeh & Chickpea Salad

(Serves 1)

Ingredients:
150g/5.3 oz Tempeh
1 can of chickpeas
1 tomato
1 cup/0.8oz/22g kale
½ tbsp/0.3 fl oz olive oil
Optional: Chilli Flakes

Instructions:

  1. Add the diced tempeh to a pan on medium heat and cook until warm and slightly browned.
  2. Drain the chickpeas, chop the kale and tomato and add to a bowl with the remaining ingredients.
  3. Combine well and serve! Top with lemon juice or chilli flakes.
