1 x Eimele Creamy Pumpkin & Sweet Potato Soup Sachet
200g cauliflower florets, cut small
1 tsp coconut or extra virgin olive oil
1/2-1 tsp Indian Curry Spice mix
Optional: Small handful coriander leaves
- Preheat oven to 200C and line a baking tray with greaseproof paper, place cauliflower florets on tray, drizzle with oil, then place in oven to cook for 20 minutes.
- Place Eimele Creamy Pumpkin & Sweet Potato Soup in bowl with 300ml hot water and Curry Spice mix and whisk well.
- Top with cooked cauliflower pieces, season with sea salt and black pepper and serve with fresh coriander leaves if desired.
