1 x Eimele Creamy Pumpkin & Sweet Potato Soup Sachet
200g cauliflower florets, cut small
1 tsp coconut or extra virgin olive oil
1/2-1 tsp Indian Curry Spice mix
Optional: Small handful coriander leaves


  1. Preheat oven to 200C and line a baking tray with greaseproof paper, place cauliflower florets on tray, drizzle with oil, then place in oven to cook for 20 minutes.
  2. Place Eimele Creamy Pumpkin & Sweet Potato Soup in bowl with 300ml hot water and Curry Spice mix and whisk well.
  3. Top with cooked cauliflower pieces, season with sea salt and black pepper and serve with fresh coriander leaves if desired.
