1 cup cooked quinoa 

3 tablespoons natural yoghurt or coconut yoghurt for vegan option 

1/2 teaspoon vanilla extract 

1/4 cup sultanas 

1/4 teaspoon cinnamon 

2 tablespoons shredded coconut 

1/4 cup water 

Top: fresh berries and seasonal fruit 


Combine quinoa, yoghurt, vanilla, sultanas, cinnamon, shredded coconut and water in a bowl and mix to combine. Serve topped with seasonal fruit and enjoy the other portion for breakfast tomorrow!
