Jacqueline Alwill’s Chicken Nourish Bowl

1/3 cup (100g) cooked quinoa
100g poached or grilled chicken (can use tofu as vegetarian substitute)
1/4 small (50g) avocado
1 Asian shallot, finely sliced
50g mung bean sprouts
1/2 small (50g) cucumber, finely sliced
Small handful parsley leaves
1 tsp balsamic vinegar
Sea salt and black pepper


  1. Make the base for your bowl using quinoa, then arrange chicken, avocado, shallots, mung bean sprouts, cucumber and parsley over the top.
  2. Drizzle with balsamic vinegar, season with sea salt and black pepper and serve.
