RECIPE: Banana & nut oat cookies

1 jar of @mayversfood Omega-3 peanut butter
1 cup coconut sugar
⅓ cup melted coconut oil
3 large eggs
2 teaspoons baking soda
2 teaspoons vanilla extract
2 cups of GF oats
Sliced banana

Preheat oven to 180c and line a baking tray. Mix the peanut butter with the sugar and coconut oil. Use an electric mixer or a large spoon to mix until well combined. Add the eggs, baking soda and vanilla, and mix well. Add the oats and mix until they’re evenly incorporated. Spoon out 2 tablespoons of cookie dough per biscuit and gently shape into a round shape before pressing a slice of banana on top. Cook for 8-10 minutes until golden. Let cool then serve.
