Ingredients:
1 x Eimele Mushroom & Creamy Corn Soup Sachet
1/2-1 small bunch baby bok choy
1/2 cup (4g) baby spinach leaves
2 sprigs fresh coriander, leaves and stalks, finely chopped
1/2 tsp sesame seeds, toasted

Instructions:

  1. Peel apart baby bok choy, chop and place in a bowl, pour boiling water over the top and. blanch 3-4 minutes, drain and set aside.
  2. Place Eimele Creamy Mushroom & Corn Soup in bowl with 300ml hot water and whisk well.
  3. Ass baby spinach to hot soup, top with blanched bok choy, coriander, sprinkle with sesame seeds and serve.
